The Discovery of Nixtamalization
The Discovery of Nixtamalization
Inspired by my work with vendors, my cooking practice, and by indigenous science, this work honors the discovery of nixtamalization by indigenous women. From the cultivation of corn, powered by the sun, the discovery of boiling corn with wood ash creating a more digestible and nutritious grain, an up to the labor of grinding corn on a metate to create corn masa. Ultimately, nixtamalization is a discovery of indigenous women.
“Without indigenous women, there would be no food or culture.”
